I decided last night when I made spaghetti that I wanted to make meatballs instead of meat sauce. Here is what I came up with and they were so very yummy. They are gluten free and egg free. And could probably be made dairy free with addition of a little more gf bread crumb. They were really tender which I haven't been able to accomplish without egg until now.
Charla's Gluten Free, Egg Free Meatballs 1 lb grassfed ground beef 1/4 c shredded Parmesan cheese 1/4 c gluten free bread crumbs 5 oz V-8 juice Salt, pepper, granulated garlic, minced onion, Italian seasoning, dried parsley and red pepper flakes all to taste. Preheat oven to 425 degrees F. Mix all ingredients together well in a bowl. Form mixture into 18 meatballs. Place in an oil-sprayed baking dish spaced apart. Bake for about 20 mins. Ladle whatever spaghetti sauce you are using over meatballs and bake until heated through. Serve with gluten free spaghetti noodles and more of your favorite spaghetti sauce. |

That sounds really good! I went years without making a good meatloaf when I couldn't use eggs. I bet you could adapt this recipe to make a meatloaf...

Trying the meatloaf with the meatball recipe I posted earlier. I topped it with spaghetti sauce. Also serving scalloped potatoes and green beans.

Last night was grilled sausage, grilled zucchini, kale caesar salad, and crockpot au gratin potatoes.
Tonight I'm planning to make fish tacos topped with cabbage, guacamole, and fish taco sauce based loosely on this recipe. I'll serve it with Mexican rice. |

Last night I made two chicken, broccoli, and rice casseroles. One was with faux chicken :lol (a can of jack fruit from Trader Joe's, pulled apart) for my vegetarian, and the other had real chicken but no dairy. They were both pretty good!

It has been too hot to cook this week so it had been an odd hodgepodge. Tonight it is supposed to finally start cooling off.

I've been working on re-implemtenting the idea of assigning the kids to meal planning and preparation. So tonight was my 11 year old -- she made ground beef stronganoff over rice with steamed green beans. :heart

Tonight was healthy sloppy joes. I finely chop a huge amount of vegetables and brown it with the ground beef mixture to add nutritional value -- onions, garlic, carrots, green pepper, etc.
With steamed broccoli on the side. |
