We had pan fried chicken with ramen noodles (Blue Apron meal) and a cucumber tomato salad. It was really yummy.

Tonight is lasagna from my freezer meal stash, plus green salad.

link - this is the lasagna recipe I've based mine on and it's delicious! (I just made two at a time, not the impressive quantity that is in the pictures)

The good salads in my house are "build-your-own" because no one except me and dh want it all. So for a Cobb salad I set out lettuce, tomato, crumbled bacon, sliced hard-boiled eggs, avocado, feta cheese, and sliced grilled chicken. I think I also set out garbanzo beans and cucumber, but those might not be part of a Cobb salad. :)

Tonight was Slow Cooker Jerk Chicken Tacos with Caribbean Salsa from the Skinnytaste Cookbook. The recipe in the link is close. The corn tortillas fell apart and made it messy to eat. Next time I'll serve it over rice.(eta or crunchy taco shells)

Do you all find that a certain brand of chicken is better and more tender? Even when I use my slow cooker, it seems like chicken is always tough lately. :think

We had creamy chicken enchilada casserole tonight, and DD devoured it. We couldn't reload her spoon fast enough!

Here's the recipe for the koftas. I skipped the corn because I can't stand the stuff : giggle

For the turmeric rice I just put some turmeric and onion powder in the cooking water

Dh found a good deal on steak so he is grilling tonight. Roasted sweet potatoes and salad on the side. I might see if DD12 wants to make cookies.
