Blackberry Balsamic Chicken
Once again, a very different but easy recipe
Enough bonesless skinless chicken to feed your family (i use 4 breasts for my family of 3) 1 jar blackberry preserves 3-4 Tablespoons of balsamic vinegar Grill chicken in pan, until browned (season as usual) Take chicken out and set it aside In the same pan (don't wash it out!) add the preserves and vinegar. Heat until preserves are melted. Cover chicken with blackberry mixture. Tastes great with a salad and sweet potatoes. Alternitively you can chop your chicken into small peices before coating it in the blackberry mixture, and serve it OVER the salad. Balsamic vinergerette works wonderfully with this. |

whoo hoo! I have chicken in the freezer. Sounds yummy. I know what I'm fixin' w/ the chicken!
