Best cheap healthy meals for a crowd?
 
I'll have four extra kiddos here for three weeks! I need to be careful not to spend too much although I know I'll be spending more. There will be 9 of us.

My main meals need to be wheat free and milk free. One of my kids doesn't like beans, so I don't want to do too many meals with beans as the protein, but I'll do some and he can have an alternative if he wants.

Rice is cheap. Stir try veggies and add a tiny bit of protein-chicken, tofu or cashews? Add in a curry sauce? We do this a lot.

Beans and rice. Baked potatoe bar. Chicken and rice casserole made with coconut milk. Vegetable soups made in crockpot.

I'll continue to think on this :)

Great! I would :lovelove:love a recipe or an idea of how to make a chicken and rice casserole with coconut milk. My life has been bereft of casseroles since my firstborn's milk allergy presented itself.

Chili, tacos or taco salads, hamburgers...

yeah, beef is cheaper for me than chicken, and I focus on protein :lol

I would just substitute coconut milk and follow the recipe otherwise. :) I do that a lot with recipes.

I had great ideas until you said wheat and dairy free. Then my brain froze. ;)

Rice... potatoes... shepherds pie?... green bean casserole... soups! :yes
