For me it's my Spinach Salad. :yum I make it weekly.

Mix two cans of black beans (or the equivalent) and a cup and a half of salsa together. We usually also add sauteed onions and peppers. Put the mixture in the bottom of a 9x13 pan.

Make whatever cornbread recipe you like. :) I *think* we usually do a double batch, but I'm not sure. :think Anyway, dump the cornbread mix on top of the salsa mixture.

Put it in the oven and bake according to the directions for the cornbread/till the cornbread is done.

I usually eat it with generous amounts of honey. :yum

I'm not veg, but homemade pesto pasta tossed with some fresh parm and crusty bread is to die for :yes

My mom's Thanksgiving dinner. Veggie turkey with stuffing and dressing, vegan mashed potatoes, sweet potato casserole, my Grandma H's dinner rolls, pumpkin pie. I feel like I've died and gone to food heaven. :melting

haystacks/frito boats/taco salad...

tortilla chips
chili beans (or black beans)
cheese (or no)
lettuce
tomatoes
olives
sour cream (or no)
ketchup or salsa

optional ingredients: raw shredded beets, zucchini or carrots, avocado, taco fake meat, or sub the chips for rice for a lower fat version.

Assemble in order in a bowl or plate. SOOO good!

A Pampered chef recipe from my 29 minutes to supper book, but it a pita-stuffing salad with garbanzo beans feta cheese, tomatoes, I forget what else. . .

The ingredients I listed above qualify as "haystacks" Typically that term is recognized by Seventh Day Adventists, as is frito boats. Taco salad is a version with all the ingredients mixed up instead of separately layered.

A black bean and corn salad - black beans drained & rinsed,fresh corn cut off cob,sliced green onion chopped cilantro if you like diced roma tomatos and avocado to add on top so doesnt get mushy if leftovers.Mix up a dressing with olive oil,lime juice sea salt,red cayenne pepper(use according to how spicy you like) and minced garlic.Pour over and toss and eat with corn chips - yummmy!
