Bagels?
 
Anybody know how to make bagels? I bought 25 lbs. of flour today. :giggle I make a lot of bread, but I realllly want some bagels to eat with salmon and cream cheese--it was my biggest craving in my last pregnancy and I'm anticipating wanting it again.

OK, too funny! I came today to post that I had made bagels for the first time, and the first thread in the Bread forum is about bagels! I've only done it once, so I'm not an expert, but I'll share how I did them.

Anyway, this is the recipe I used.

2.75 - 3.25 c. all purpose flour
1.5 cups whole wheat flour
1 pkg yeast (2.25 tsp)
1.5 c. warm water (120 - 130 degrees)
3 tbsp + 1 tbsp sugar
1 tsp salt

1. In a large mixing bowl, combine 2 cups of the all purpose flour, and the yeast. Add the warm water, the 3 tbsp of sugar and the salt to the dry mixture. Beat with an electric mixer on low to med. speed for 30 seconds, scraping bowl. Beat on high speed for 3 minutes. Then, use a wooden spoon to stir in the whole wheat flour.
2. Turn out dough onto a floured surface. Knead in enough of the remaining white flour to make a moderately stiff dough that is smooth and elastic (about 6 -8 minutes). Cover and let rest 10 minutes. Grease a baking sheet.
3. Working quickly, divide dough into 12 portions; shape into smooth balls. Punch a hole into the centre of each; pull gently to make a 2 inch hole. Place on baking sheet; cover and let rise 20 minutes (start timing from when the first bagel is shaped.)
4. Broil bagels 5 inches from heat 2 minutes per side (should not brown) Meanwhile, bring 6 cups of water and the remaining tbsp of sugar to a boil. Reduce heat. Preheat oven to 375 degrees. Simmer bagels, 4 at a time for 7 minutes, turning once. Drain on paper towels. Place bagels on a well greased baking sheet and bake at 375 for 25 - 30 minutes.

These turned out really well. Try to get them all the same size, as I had two smaller ones that got boiled too long and didn't turn out. Also, the hole really does need to be 2 inches in diameter, otherwise it will close up when they bake.

oh, I used to make bagles all the time because they weren't available to purchase around where I live.... they were so good! (I made my own English muffins, french bread, everything!)

now you have me wanting to pull out my recipe book again... and eat MORE BREAD! :giggle
