D'oh! Finally ditching canned soup . . .
 

I never opened the soup chapter of my battered copy of The Joy and only realized just now, after all these years, that one of my kids' favorite soups is right in there at about 30 percent of the cost of buying it canned! Here it is in paraphrase with my modifications:

Take 3 or 4 pounds whole chicken or chicken pieces, 6 pasternacks* (diced), 5 medium yellow onions (coarsely chopped), 4 large cloves garlic (minced), 3 large stalks celery (cut into crescents), a bouquet garni, and salt and pepper. Cover with chicken broth and/or vegetable broth and/or water. Bring to a boil, reduce heat, and simmer about an hour or until chicken is thoroughly cooked. Take chicken out and cool in a platter. Meanwhile, add 2 cubed potatoes to soup and simmer 15-20 minutes more or until tender. Dice chicken, return to soup, and heat. Remove bouquet garni. Stir in 1/4 cup chopped parsley and more salt and pepper to taste.

If you add rice, egg noodles, chopped tomatoes, corn, and/or pasta and take out the potatoes as needed, you can pretty much duplicate Campbell's "Healthy Request" chunky chicken soups. I'm going to freeze most of this.


*"Pasternack" is a fine old word that needs to be back in circulation IMO. It means any root that cooks up sweet. You can use carrots, parsnips, and/or turnips.
