Stretching a meatloaf
I am in the mood to make a meatloaf. I only have one pound of ground chuck. There are only three eaters, so it doesn't have to be huge. What can I add to it to stretch it or increase the nutritional value? Here's what I have on hand:
GF oats onions potatoes bell pepper (red, yellow and green) mushrooms asparagus eggplant carrots eggs butternut squash a little cheese Whatever doesn't go in the meatloaf will become sides! ;) |

Lots of people use oatmeal to stretch meatloaf :yes That's what I'd go for if I were you. Oh, and I see you have cheese. One of my FAVORITE meatloaf recipes has cheddar cheese :yum

onions bell pepper (red, yellow and green) carrots eggs The aboe is pretty much how I make meatloaf. I use seasoning salt or bouillion cube or something tos eason it up, along w/salt and pepper and either spaghetti sauce,t omato sauce or a little milk. |

I would definitely add an egg (or two), some diced onions (maybe saute ahead of time?), diced bell pepper, grated potato and some oats. If you can food process the oats so they're more like bread crumbs, I would do that. Cheese would be good in it, too.

I would use oatmeal and put the onions and green peppers in it too (I love meatloaf with them in it). I have never had it with cheese so I can't speak to that.

In it I would put...
GF oats onions bell pepper (red, yellow and green) eggs as a side I would have either butternut squash or mashed potatoes, asparagus and carrots. I wouldn't use the eggplant or mushrooms. The cheese could be put on whichever thing someone wanted cheese. |

here are all the things I have added to meatloaf before (not necessarily at the same time!)
eggs oatmeal bread crumbs rice quinoa barley lentils onions, chard, mushrooms, zucchini, bell peppers, spinach, carrots |

If you had spinach I have a recipe that you build the meatloaf with the meat in a big rectangle, then top that with mashed potatoes, then spinach, roll it all up jelly roll style and cook..... :yum You might be able to put chopped chard in as a sub for the spinach. :think Your picky eater could pick out the parts she doesn't like! :giggle
