:cup I am struggling with dinner. I think part of it is someone always makes a comment about not liking what I am making and we are all just bored of food. :(

I let the fish go bad in the fridge :dohso I'm going to make the recipe with chicken since I have it on hand. So chile lime cilantro chicken with rice, beets, and kale caesar salad it will be.

I didn't read the whole thread, but I'm really struggling with dinner. It's SO hot! And the humidity where I live in the highest it's been (by a huge amount) in 45 years. We don't have air conditioning. We don't have a grill. All meals are GFDFSFCF, and need to contain meat.
Ideas? |

Chicken salads. The chicken can be pan fried, or you can bake it early in the morning/on a cooler day and set it aside for dinner. We do a lot of them in the summer. I set out a bunch of toppings (fruits, vegetables, chickpeas, seeds, nuts, etc) so everyone can create their own on a bed of mixed greens.

The way this ends up looking in our house is brown a lb of pork, toss in some garlic, ginger and book a bit more. Toss two bags of shreaded cabbage ( I can grab these for the same price as the cabbage frequently) on top and add in fish sauce and coconut amenos and what oever other veggies I am adding in. I made beans and rice in one pot last night. I added 2 c dry rice (with veg broth instead of water) to a large pot along with two cans rinsed black beans (three would be better for that much rice), about a c of salsa (a can of rotel would be good), chopped onion, and some soy chorizo. I cooked it as long as the rice needed to be cooked. We topped with cilantro, cheese, and sour cream. It wasn't super, but it was fast, cheap, and easy.

bananacake I do instant pot meals..I feel like I remember you in the IP threads?
pasta and meat sauce in the ip. (gluten free) brown beef, add pasta sauce and water cook 5minutes. tonight we had pasta salad (made in the ip) and pan fried fish and zucchini with garlic and fresh gardening tomatoes. I do fajita bowls with the ip. I cook the chicken and then come back in 35 minutes (when it has depressurized a bit) quick release and take the chicken out and add I to a frying pan. Add rice to ip and some bone broth and water and then cook that up in 5min high pressure. I add cooked beans cumin, chili powder, garlic and salt to the frying pan and toss until well mixed. I eat it over salad greens to reduce my grains with fresh tomatoes the rest of the family eats with rice. All requires some heat but no oven and the stove top is only on for 15min tops. |
