Kombucha: What's your sugar to water ratio?
 
I've been experimenting with using less sugar, and I recently had a SCOBY mold!

I've been told so many different ratios and wonder what others are doing. Also, how long do you let it brew?

I use one cup sugar to a gallon container (about 3 1/2 quarts fresh tea ) I let it sit 7-10 days for first ferment and a day or more for second ferment.

I am not comfortable fermenting longer since all my little people drink it and it does get higher in alcohol the longer the brew.

Are you covering it with cloth that is breathable?

I do 1 cup sugar per gallon. :yes really sugar in it is just going to help it ferment faster and the more sugar the better and more carbonated it is. :think

The Scooby eats the sugar, you're not consuming as much as you put in, right?

Not necessarily during the 30 days. I use lids in the summer without issue to ward off fruit flies.
