Asian Red Cabbage Salad
 
Thought I'd share a yummy salad I made last night:


1/2 head red cabbage, thinly sliced
3 carrots, shredded
1/2 cup zucchini, shredded
1/2 cup yellow squash, shredded
1/2 cup diced onion, scallions or shallots


dressing (mixed in blender or food processor)

1/4 cup natural peanut butter
1/4 cup rice vinegar
1 large garlic clove
1 tbsp garlic and hot pepper sauce (Taste of Thai brand)
1-2 tbsp sesame oil
2-3 tbsp kecap manis (Indonesian sweet soy sauce)

Those measurements are really a guess, since I just threw it together. It tastes even better the next day with the flavors all blended.

I was inspired by a few I found online. I had to adapt those since I had different ingredients.

Oops, I just realized that I forgot to list the kecap manis (Indonesian sweet soy sauce) in the dressing ingredients.

That's exactly the way I cook lately too, read a lot of recipes online for something and wing it. :lol Thanks for sharing.

That's funny, in my head I added soy sauce to the recipe list when I first read it. :giggle
