Tonight is Taco Casserole and steamed veggies.

We had pizza last night. Today I am thawing a freezer meal of black bean and peach enchilada casserole, which I will serve with rice.

Last night I went out for sushi with my boyfriend and his family :yum Don't know about tonight yet :think I just did a big grocery shopping trip a couple days ago though so I have plenty of options :tu

Simple dinner tonight. Baked sweet potatoes, baked chicken, roasted zucchini and summer squash. Leftover rice for the kid who doesn't like sweet potatoes :)

Tonight we had beef stronganoff over rice or zucchini strips with carrots and broccoli on the side.

Tomato sandwiches - fresh tomatoes from the garden, homemade bread, mozzarella, and homemade olive tapenade.

My kids LOVE salmon BUT when I make a meal that I know they're not big fans of I just go a little heavier on the sides. So even the ones who won't eat much of the main part can fill up on the other dishes.

This was actually very good :tu I cut the amount of cloves called for in half. I skipped the carrots (DH missed them). DH said, "This is the closest thing I've had to Dinty Moore in a long time!"

I am making carob brownies for dessert.
