What is your favorite Vegan Mac and Cheese recipe?

I can make this three different ways, crockpot (as explained below), oven (250 for 30-45 minutes) or just mix the cooked mac with the cheese sauce and reheat until it thickens, stirring frequently)

Vegan Mac N Cheese

This is two recipes combined from the 7 Secrets book. It makes a large recipe of macncheese, filled half the huge crockpot we have.

1 can coconut milk
3 1/4 c water
1/4 nutritional yeast
3 tsp salt
1 1/2 c cashews
handful of carrots
2 tsp lemon juice
1/4 c cornstarch
3 tsp onion powder
1/4 tsp garlic powder
lb of macaroni or more (I didn't really measure that part)

blend all but the macaroni, using only half the water until the cashews and carrots are creamily blended :) Pour the liquid into the crockpot and add enough macaroni until it's just under the surface of the liquid. Or, you can pour in however much macaroni you have and add until the liquid just covers the top of the pasta. Click your crockpot on high and let cook until liquid is no longer visible (maybe 2-3 hours).

You can use leftover cheese sauce for all sorts of things or freeze it for a quick meal later. If you want to use it, heat it on the stove until it's softly boiling and stir until thickened. This will scorch at the bottom fairly quickly.

Yes, raw macaroni... You may have to tweak it a bit on the times and temps. The first time I did it, it was good but the second time, it was in there a little long and got CRISPY on the edges (which I love, but no one else does).

Yay, I am so happy to find this recipe.How does it taste? I don't really enjoy the taste of nutritional yeast and stuff. Maybe it is an acquired taste?

Gonna try this w/Gluten free pasta....hmmm hope it turns out ok in my crock pot cause that sounds soooo easy!

That's pretty much what we do - but you can keep it simple.

You just need something to be the creamy base - you can even blend up a can of white beans! - Or even lightly steam cauliflower then blend it - there's your creamy base.

add miso or salt
add nut. yeast - to taste
add a tinge of mustard or ACV
add garlic

add olive oil once cooled - don't want those trans fats! DANGER! ;)

Drizzle this same sauce on steamed broccoli! :)

Jen, I posted that I was making your recipe on FB last week, and now people are asking me to share it. Can I post it, just reference that it comes from an online friend and that it is a mix of two recipes in the 7 Secrets book? What is the full title of the book? Not sure how recipe copyright stuff works, since it's an adaptation...

I loved the recipe, by the way! Thanks for sharing!

in a pinch my kids LOVE the boxed macaroni and chreese. it's vegan, gluten free, casein free, egg free and soy free. i usually use half a packet of the mix and save the other half for another batch.

It's adapted enough to just have been inspired by the Seven Secrets book. don't have it handy for authors' full name but I know one of the authors is named Neva and the other is possibly named Jim. I know it's on Amazon
