Re: Help with pad thai sauce

The Pad Thai that I was taught to make by Thai cooks here in Thailand only has tamarind juice, sugar, and fish sauce in it :shrug3

Other ingredients in the recipe which will effect the flavour when all mixed together are: rice noodles, beam sprouts, tofu/meat, egg, pickled white radish, crushed peanuts, spring onion, dried shrimps, chilli powder, oil, salt and garlic.

That sounds like the sauce we made but its not the sauce we were used to .Do they have any other sauce recipe that they use for the noodles?

I have found that "real" Thai food is a little different from Thai food in western Thai restaurants - they seem to tweak it for western tastes. That's the only recipe I have been taught so far.
