Am I going to give us food poisoning?!
 
Please help me - I've been cheerfully preparing beef brisket to go in the crock pot tomorrow, browning the meat with onions to give me a head start before church tomorrow, when I've just thought - am I going to give us food poisoning, as I'm only browning the meat and not cooking it thoroughly? I've just about got time to cook it tonight if needed and reheat it in the crock pot tomorrow, if that would be safer. I could go out and get some more but I'd rather not waste what I've got as it was quite expensive (and I don't really want to go out!!)

Eta: I was going to let the beef cool and put it in the fridge overnight. If I cook it thoroughly, I won't have time to let it cool and refrigerate it.

If your storing it in the fridge overnight then you're fine.

Storing it browned is fine but when you cool it, spread it out so it cools faster. What you are trying to avoid is having it hang out in the 40-140 zone very long.

If it’s still all one big piece then you’re golden- safest kind of meat because there’s no oxygen on the inside.

:phew Thank you! It's all one big piece still. I might put the whole pan in cold water until it's cold enough for the fridge.

Totally fine to brown it and then put it in the fridge.

If it's cold where you live, you can chill it quickly by putting it outside, then move it to the fridge.

That second giant fridge is a perk of certain months! I often use my garage so I know no animals can get it.
