Tonight I made Sheet Pan Fajita Salmon with Cilantro Lime Butter, Mexican Rice, and Guacamole Salad.

Turkey Pot Pie is tonight's plan and I'm thinking about making tomato soup for a lighter dinner tomorrow since we're going out tomorrow evening. The rest of this week, I have no idea!

I hosted my cookbook club meeting tonight. But the girl who was supposed to bring the entree flaked at the last minute.

So we had buffalo flavored hummus, pretzels with beer cheese, blue berry tart, and cheese and crackers with pepperoni. And wine.

Today and tomorrow are going to be in the 90's so I'm planning on no oven/minimal stove. So, it'll be a big Cobb Salad for tonight (we've got oodles of lettuce in the garden!) and a Muffaleta for tomorrow.

I wanted an easy dinner tonight, so went for hotdogs, but when it involves 2 different varieties of sausage and 3 different kinds of rolls, 2 of which are the kind you have to finish baking in the oven, it isn't so easy any more :giggle

We are about to fly to Texas for a week, so we're just trying to use up what's in the fridge :giggle

So I had a protein shake smoothie thingie with fresh spinach, sweet potato and broccoli stir fry, and leftover turkey bacon.

We're having beef short ribs if I can get my act together. If not, chicken and green bean stir fry.

What was your starting point? I have neaver heard of a chicken pot pie soup but it sounds like a wonderful dish.

This was my starting point. My kids used to love this so much, but I quit making it when I went gluten free, but I figured out I could easily sub gf flour and just not serve it with biscuits. I used diced potatoes, not hashbrowns, and upped the volume of the soup by adding more broth, adding more of the veggies called for in the recipe and adding some other veggies I had on hand. It is such a comforting soup.

It's Shark Week! I have NO IDEA what I'm doing for dinners, but we're having shark themed desserts for sure. :)
