I'm making One Pot Paprika Chicken Thighs over brown rice. Probably should serve with a spinach salad since I have tons of spinach.

Korean Beef Bowls tonight. I had leftover bibimbap sauce that made them even better.
Last night dh grilled burgers and I had a big salad with some leftover steak sliced on top. I think tomorrow we'll have a variety of leftovers. 4th of July we always throw things on the grill and have watermelon, sweet corn on the cob, and chips. Once a year we make "puppy chow" and take it to the fireworks. We almost never eat out or order takeout. It doesn't fit into our budget. I get quite tired of cooking every day, week in and week out, all year. I try really hard to make enough for 2 nights, whenever possible. My DH has finally started doing some cooking recently and that has helped quite a bit. |

The plan for tonight is sausage and peppers sheet pan with cheddar polenta and asparagus.

I just buy the canister of instant grits from the grocery, make them as directed (except I use chicken bone broth instead of water) and then at the end add a little half and half and lots of sharp cheddar cheese. Polenta is a little harder. The recipe I use for it is 3 cups chicken broth, 1 cup cornmeal, 3 TBSP butter, and 1 tsp salt. Bring chicken broth, butter and salt to a boil, whisk in cornmeal, reduce to simmer and cover, whisking often. It has to cook for quite a bit of time like 30 minutes or more. Also if you like smoother, softer polenta, you can use up to five cups of liquid. Then at the end you can stir in cheese or whatever you want. If you have leftovers, you can put them into a square dish in the fridge and then the next day cut into squares and saute in olive oil in a pan to make the outsides crispy. I don't usually have as much success with making them crispy but just stuck to the pan. :doh Maybe you would have better luck than I. :shifty |
