July Dinners - What are you cooking?
 
Please share what you are eating for your main meal each day. Recipe links and photos are encouraged if you have them.



I am actively menu planning right now so will have to come back to update what we are having tonight. :)

I think I've decided on a chicken, rice, veggie casserole thing based on what I have on hand in the house since grocery shopping isn't until tomorrow. I'll serve a Greek salad on the side. Another strange combination but it will have to do. :doh

I had been planning pork chops and roasted veggies but wiggle worm wants to make corn dog muffins because it is one of her stuffed animals birthday.

I’m so ready for second trimester.

Tonight I ordered Noodles and Co from Door Dash :shifty I ate shrimp pad Thai and a salad, and DD has mac and cheese with chicken and apple sauce.

I made chicken cutlets, sauteed spinach w/bacon, and spaghetti with garlic and olive oil.

Secunda has been asking for Chicken Friiiiiiiiied Chicken. We'll see if cutlets will suffice for now.

Crockpot Salsa Chicken, which everyone picked at. :-/ The leftovers will probably turn into quesadillas or tacos in a few days.

I'm committing to cook dinner every night in July. I made a plan for the entire month.

Tonight is grilled chili-rubbed flank steak, broccoli, and whatever salad veggies are left over after lunch.

I did that very successfully in January. So much so that I carried it over to February. Saved a lot of money!

I buy frozen pizzas from Costco and we have those about once a week. They come out to $3-4 per pizza, so not too bad. We make 2-3 depending on how many people are home. I love having them because anyone in my family can cook them, everyone likes them, and they are cheap!

I so so wish that I could do this! But between food allergies and the fact that I have the only children in the world who don't like pizza it doesn't work

I didn't like pizza as a kid. I have figured out as an adult that I don't like the thick bread. I like thin crust pizzas. I'm sorry you deal with food allergies. We've been VERY lucky not to have to worry about food allergies.

I grew up cooking from scratch and cooking for friends with food alergies (making wheat and corn free in the 80's and 90's) so dealing with food allergies hasn't been that bad for me. I can make an amazing pizza that we can all eat, some just choose to not. It just takes time. I can't out source much of my cooking.

And I really feel like the key to good dairy free pizza is to use thinly sliced apples and skip any cheese substitute.

We usually get Papa Murphy's if they have a special but I might just add those to my Costco list instead!

Korean Beef Bowls tonight. I had leftover bibimbap sauce that made them even better.

Last night dh grilled burgers and I had a big salad with some leftover steak sliced on top.

I think tomorrow we'll have a variety of leftovers.

4th of July we always throw things on the grill and have watermelon, sweet corn on the cob, and chips. Once a year we make "puppy chow" and take it to the fireworks.

We almost never eat out or order takeout. It doesn't fit into our budget. I get quite tired of cooking every day, week in and week out, all year. I try really hard to make enough for 2 nights, whenever possible. My DH has finally started doing some cooking recently and that has helped quite a bit.

Oops, I said the wrong thing.:doh I'm making cheddar grits. I just buy the canister of instant grits from the grocery, make them as directed (except I use chicken bone broth instead of water) and then at the end add a little half and half and lots of sharp cheddar cheese.

Polenta is a little harder. The recipe I use for it is 3 cups chicken broth, 1 cup cornmeal, 3 TBSP butter, and 1 tsp salt. Bring chicken broth, butter and salt to a boil, whisk in cornmeal, reduce to simmer and cover, whisking often. It has to cook for quite a bit of time like 30 minutes or more. Also if you like smoother, softer polenta, you can use up to five cups of liquid. Then at the end you can stir in cheese or whatever you want. If you have leftovers, you can put them into a square dish in the fridge and then the next day cut into squares and saute in olive oil in a pan to make the outsides crispy. I don't usually have as much success with making them crispy but just stuck to the pan. :doh Maybe you would have better luck than I. :shifty

You can also buy cooked polenta. It comes in tubes and doesn't need refrigeration. It's much more expensive that way but I buy it when it's on sale. I slice it and either grill it or sautee it in olive oil. I prefer firm polenta, not the porridge consistency.

I *love* grits, and I order them at restaurants all the time (shrimp and grits! Yum!!) but mine never come out right. I should keep trying.

I have seen the polenta tubes at Trader Joes.
