Amazingly good almond covered lemony chicken
:yum Mmmmmmmmmmmmmm, I wanted to lick my plate seriously. Very easy, fairly inexpensive if you can get the slivered almonds on sale (look for the salad topper kind).
Makes 4 servings 4 boneless, skinless chicken breasts 1/3 cup slivered almonds 4 tbsp butter 1.5 tbsp minced garlic (if you prefer) 2 tbsp lemon juice a couple pinches of salt and pepper Rub salt and pepper onto thawed chicken breast. Pop in oven for 25 minutes on 350. Melt butter on stove and stir in lemon juice, garlic and almonds. Let almonds start to get brown. Add the chicken and cover for 5 minutes. Flip chicken and cover for another five minutes. Remove chicken to plates and carefully portion out the almond mixture onto each piece. Mmmmmmmmm, so good and easy!! I served this with herbed, buttery green beans and it was awesome :rockon |

ooooh that sounds so GOOD! Does the sauce take on a big almond-y taste? DH doesn't like nuts, and neither do the kids but *I* do, and I was wondering if i could just take the nuts out. Or, maybe, I'd just add mine on at the end :giggle

Just wanted to come back to this and say thank you for the recipe! I made this tonight, and it was yummy! Even dh raved, and he's obnoxiously picky during the summer when the heat kills his appetite. :giggle

I was given this link in another thread about a month ago and I just finally tried it tonight it oh wow was it good!!! I didn't even mind doing the dishes I was still basking in the yumminess of the meal :giggle

This sounds awesome. How important is the butter to the flavor? I have gallbladder issues and need to eat super low fat. Do you thin I could cut the butter in half or use olive oil instead without compromising the flavor much?

Ooh so yummy. And it really cooks this quickly? Do the chicken breasts have to be thin, or do regular unpounded ones cook through in that time?
