Running Out of Cake Flour
I'm short on cake flour and I am supposed to make a cake. This is an oil cake that uses some buttermilk for added moistness. Can I replace about 1/3 of the cake flour with bread flour?

You could, but expect it to be denser and maybe have some tunneling. No AP flour on hand to use?

Bread flour has a much higher gluten content. It won't well. :no
You can try replacing 3 T. per cup of flour with cornstarch. It's 2 T. per cup of AP flour. :) |

if you have regular all purpose flour cornstarch and a sifter you can make your own..
For every cup of all purpose flour replace 2 tablespoons of it with corn starch and sift it all together I like to do a few passes and you have cake flour. BTW I wouldn't use bread flour your replacing a very low gluten flour (cake) with the highest (bread) don't think that will mix well. |
