Beef & broccoli over rice for the kids & caulk rice for me.

I bought spiraled zucchini & squash today. Not sure what to do with it. :think

I meal planned for the week. Finally jumping on that train. :)

But it needed to go in the crock pot, and I didn't put it in before we left for the capital. Ooops. Baby steps.

Therefore, hubby had leftover steak and potatoes. Not bad for leftovers. I ate a bar. The baby had protein waffles.

Chicken ranch chili
A friend of mine brought it over in ziploc baggies, prepped and ready to go in the crockpot... it was SO yummy! DD1 ate two bowls!

I actually have this week planned and a list to work into next week.

Tuesday - Tuscan Spaghetti Squash casserole
Wednesday - Asian burritos
Thursday - Tortilla soup
Friday - jambalaya
Saturday - might be out otherwise shepherd's pie
Sunday - fajitas

Frozen? I buy it frozen at Costco and I love it! I use it in place of rice and pasta. I like it better than cauliflower rice.

Gluten free pizza pasta - I used leftover pizza ingredients and made it up as I went. I used the base recipe of cacio e pepe and used red pepper instead of black and then added in the pizza ingredients (red onion, green pepper, black olives, mushrooms, pepperoni, tomato juice, pizza spices along with the parmesan cheese and pasta water called for in cacio e pepe. It turned out really yummy! :yum

Yes, frozen. I got it at our local grocery store. I'll have to try using in in place of cauli-rice. Thank you.

Here is the recipe for the Tuscan Spaghetti Squash Casserole. I use ground turkey instead of pork.

I was on my phone when I posted. It is so yummy! All 4 kids loved it! That never happens. :giggle :sigh

F - IP gnocchi soup
S - burgers
S - grilled chicken breasts - extra for salads

Sure. It's from the Saving Dinner book by Leanne Ely.

3/4 lb ground beef (turkey also works)
1 cup oats
1/4 cup hoisin sauce
3T water
2 T soy sauce
1/8 t cayenne
Tortillas
2 cups shredded cabbage (I use red.)
1 medium carrot, shredded (I use more.)
plum sauce, optional

Cook ground beef. Drain. Stir in oats. Add hoisin, water, soy sauce and cayenne. Let simmer until blended.

Serve in tortillas with plum sauce, cabbage & carrots.

She offers a ginger salsa recipe that may also be added. We don't like tomatoes so never make it. It's plenty yummy without.

1 large tomato, finely chopped
1 T chopped fresh cilantro
1t finely chopped fresh ginger

Homemade chipotle tonight. I make all the ingredients, everyone makes either a burrito, rice bowl, or salad.

Ground beef, seasonsed with salt and garlic
rice
black beans
salsa
sour cream
corn
lettuce
grated cheese
tortillas
grated carrots

No avocados in the house, unfortunately.

I've been using meal delivery services lately. Like Hello Fresh. :bag Takes the work out of meal planning. I've also used Martha and Marley Spoon. But the meat portions are small for this Texas family with Texas sized appetites! :shifty

This is probably the last week we will do it.

Menu is:

Blacked Chicken Penne - I added french bread with butter and salt

Italian Meatloaves with mashed potatoes and green beans - I will add rolls

Enchiladas verde - I will add rice and beans

We'll eat leftovers twice and I don't know what we are doing for the weekend yet.

Oh, on Sunday I made Shrimp Scampi from a recipe on allrecipes. It turned out yummy and was so easy. Everyone was thrilled with it. I also made homemade cheddar thyme biscuits, also from allrecipes. They were amazing.
