Yellow Split Pea Soup
2 cups yellow split peas 5 cups broth or water 6 carrots, shredded 3 potatoes, shredded 1 onion, shredded 3-6 cloves garlic, or to taste, chopped Salt (I used 1 teaspoon), pepper (I used .25-.5 teaspoon), dill weed (I used 1 teaspoon) to taste Place all ingredients in crockpot. Cook on low for 6-8 hours. Serve over rice, or alone. Stir in plain yogurt for creamy soup, or place dollop yogurt on top to serve and sprinkle with dill weed. This came out quite thick & hearty. It was much better than I expected it to be! I could have added a little more dill, but I liked the subtle flavor. And my kitchen smelled great! |
