Vegan meringue?
 
Since we are egg free I've been doing a lot of vegan baking. Has anyone ever attempted vegan meringue? I've found some recipes that's LOOK good. But they are made with chickpea liquid :shifty

I've not been brave enough to try the meringue, but we do use an aquafaba mayo that's very good.

I have seen that recipe as well and has been interested in it, but haven't tried it.

It's pretty yummy but IME it doesn't hold up well- it goes back to being liquid pretty quickly. I'm not sure if I'm doing something wrong, though.

Do you use anything to stabilize it? I put in about 1/2 teaspoon Xanthan Gum and 1/2 teaspoon cream of tarter and it works well. I've done this more for a "dairy free" whip cream than meringue but it has worked well. The topping has held for days doing it this way.

Nope. The instructions I follow do not say anything about a stabilizer. I will try that next time!
