:cup Pumpkin time! :dance I think I'll bake oatmeal with pumpkin for breakfast. :yum For dinner...baked tilapia with mayo/dill sauce, roasted potatoes and veggies. I should get to my Whole Foods for some of that kale!

Steam 1 lb frozen in the microwave until done. Heat half a stick of unsalted butter in a cast iron skillet over medium heat. Brown them in the melted butter until golden brown. Salt to taste. :grin

Meatloaf tonight with fingerling potatoes and ...maybe spiralized carrots to roast along with them.
I got to Whole Foods for their $1 bunches of organic kale (ends today here) yay! and they also had a sign for $3.99 for 90/10 ground beef. When the butcher told me they had run out, I asked if he could sell me the other for the same price...I was thinking the 85/15 that was $4.99, but he scooped up the $11.99 grass fed for me! :jawdrop I got all he had out, which was 3 pounds. What a nice gift! |

Broccoli Soup. It's not quite what I would consider soup weather, but my youngest has been asking for this and I'm all about healthy requests lol.

We had breakfast for dinner last night: spinach and leek quiche with puff-pastry crust (which is THE best way to make quiche!) and blueberry muffins.
Tonight...I have no idea. I'm really trying to clean out my pantry and freezer this month. |

We had shrimp pad thai (using this recipe), shrimp potstickers, and an asian chopped cabbage salad.

Sweet and tangy BBQ beef, Brussels sprouts. I'm not adding the rice, but might eat it on GF bread. I like eating it with coleslaw, but I didn't feel like making it.
SWEET AND TANGY BBQ BEEF 1 lb ground beef 1 medium bell pepper, chopped 2 medium onions, chopped 1/2 c. olive oil 2 c. cooked rice (optional) 1/4 c. liquid from jar of dill pickles 3/4 c. BBQ sauce Salt and pepper to taste Brown ground beef, bell pepper, and onions in oil. Combine with rest of ingredients. *Pickle liquid and BBQ sauce are both salty, so be sure to taste before you add salt! |

I made bread this afternoon, so we had rolls to go with the cheesy chicken from the crockpot and steamed veggies. Boring, but the kids liked it. (Although two of them ate an awful lot of bread and jam.)

I've got a roast and onions in the crock pot. I'll probably do green "fries" and some sort of roasted potato to go with it. Or I might make more bread and turn it into a French Dip. (I love baking bread!)
