It was a busy night of multiple activities and 2/6 of my family were not joining us for dinner (because of a cross country banquet) so we went simple. Finished up the leftover chicken veggie soup. :heart

Last night we had lamb leg and rice stew with carrots, rutabagas, Brussels sprouts simmers in bone broth.
Tonight I will do something with the left over lamb, I have a bit of cabbage from our community garden I need to use up.

Tonight's dinner was super delicious! It was sort of a made up combination of a few different previous recipes I have used in the past.

I chopped onion and garlic. Added lemon zest and juice, ACV, a variety of seasonings. Then sliced chicken breast and let it marinade in that. Put it all on a cookie sheet, added asparagus and roasted. Served over raw zucchini noodles.

Supplemented the kids plates with homemade pizzas. Topped with spinach, tomato, and pepperoni. :heart

I went a little crazy with brussels sprouts tonight, but we had Brussels Sprouts Carbonara and Garlic Lemon and Parmesan Roasted Brussel Sprouts. These were the yummiest brussels sprouts I've ever had....DH couldn't stop eating them!

I would argue that there is no such thing as too much brussel sprouts! :snooty LOVE them! :heart (says the lady who quite regularly eats a bowl of 1 lb brussell sprouts for lunch). :shifty

I'm going to try to make up an Asian chicken noodle soup tonight. I'm thinking of including onion, mushrooms, carrots, snow peas, ginger, garlic, bone broth, soy sauce, zucchini noodles, rice noodles, chicken, toasted almonds, and crumbled seaweed.

Tonight we had brown rice and trout (the last of the fish we caught this summer, now I need to buy fish to make sure we have weekly seafood, with asparagus and Brussels sprouts slathered in garlic sautéed in butter. Thank you for the brussley inspiration!
