Re: Your best meatloaf recipe

2pounds of ground beef
Salt / pepper to taste
1 cup of either oatmeal, millet flakes or poha
1 large egg
1 -2 jars of baby (gerber or other brand) beef or chicken (it depends on sensory issues and how large of a jar we're talking here. This makes the meatloaf softer)

Mix very well. Put ketchup on top, slam in oven at 350° for 60 minutes.

I hate regular meatloaf, with the warm ketchup on top :shiver ...but a few years ago discovered I :heart Italian meatloaf. I can come back with a specific recipe if you're interested...I mix Italian spices, spaghetti sauce, diced tomatoes, mozzarella cheese and spinach into the loaf, and top it with spaghetti sauce and mozzarella. The original calls for breadcrumbs but I've also used almond meal for a paleo version.

I do an Italian meatloaf! Ground round, italian seasoned breadcrumbs, parmesan, eggs, fresh parsley and basil, garlic if I have it on hand. Everyone in our family enjoys it however someone will typically say, you could've just made spaghetti and meatballs, lol!!

Oooh, we are meatloaf lovers here. I find meatloaf to be one of the most forgiving recipes out there. Lots of personal adaptations and changes are allowed.

Our basic go to is ground beef, chopped onions and garlic, oatmeal, seasoning, and eggs.

But I've been known to shake that up in a wide variety of ways.

So this thread is 3.5 years old. Any guesses as to how many meatloafs I have made since then? :giggle

Well if you still want to try a new recipe, this one: http://thehealthyfoodie.com/individual-meatloaves/
was a good one. I made a half recipe in a muffin tin, and I subbed some tomato paste for the sun-dried tomatoes because they were not in the budget.
