Super delicious grain free pumpkin muffin
 
I've made these twice now (once with honey and sugar mix, once with only honey) and they are soooo moist and portable and taste like you are eating a slice of pumpkin pie! They are fairly good for you too!

Pumpkin Muffins (made with coconut flour)

Ingredients (Makes one loaf of bread or 8 muffins)
  • 1/2 cup of pumpkin puree*
  • 3/4 cup of honey or maple syrup
  • 4 eggs
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon of ginger
  • 3/8 cup of coconut flour
  • 1/2 cup of walnuts (optional)
Method
  1. Preheat your oven to 350 degrees F
  2. Combine all the dry ingredients in a bowl and then blend in all the wet ingredients. I use a mixer because the coconut flour is a bit challenging to blend by hand.
  3. Fill a bread pan with the batter (5 by 9 inches), or fill about 8 cupcake liners about 2/3 of the way up.
  4. Bake for 30 minutes, or until a toothpick comes out clean and the top is browned.

They sound awesome, but coconut is a no-go for us. Wonder what could be used instead....off to google.

i'm guessing rice flour would be a safe GF substitute but cant find a ratio.....anybody know?

Here is a recipe using rice flour and one using almond flour.

I think trying to alter this recipe for other gluten free flours would be tricky. Coconut flour sucks up soooo much moisture, that's why there is only a little bit in this batch. But, if you *can* do coconut (it's high protein and fiber :tu) this is delicious.

Hmmm. . . .I just made these and I think I did something wrong. :scratch Mine did not look anything like the ones pictured in the link. My batter ended up really stiff, too. maybe not enough moisture? :think I had to leave out the cinnamon but I don't think that would have altered it that much. They taste *ok* but not great.

Oh! I didn't sift my coconut flour - don't you have to when you're baking with it? :shifty Yeah, I don't even have a sifter thing at all. :O I'm also really bad about just kinda eyeballing the measurements. :shifty Probably why I'm not a good "baker". Oooh, I forgot one of my eggs turned out to be a "double yolker" as well. I guess any of those could have thrown them off. :O

I'm sorry they didnt' turn out fabulous for you. I'm not a real exact cooker/baker, but I try and be *very* careful when cooking with coconut flour. It sucks up soooo much moisture, that a little bit too much could really change the consistency, I think.
