CrockPot Aztec Chicken (from another forum)
6 boneless, skinless chicken breast halves 2 c. frozen corn 2 cans black beans 8 oz. salsa 4 oz. cream cheese Instructions: Combine black beans, corn, and half the salsa in the crockpot. And chicken, spread remaining salsa on top Cook approx. 3-4 hours on high, low 5-6 hours; more if using frozen chicken Add 4oz. package of cream cheese, stirring in well, in the last hour. Serve with rice and/or corn tortillas. You can top with cheese and sour cream. If you omit all the dairy, it's still good. |

Desiree, I am quite sure I had Aztec Chicken at someone's house a couple of months ago. She cubed the chicken, and might have omitted the beans. :think It was delicious served on rice with a salad. :yum

I really like this Mushroom Sauced Pork Chops one. I use homemade cream of mushroom soup for gf and just throw it in there. The children scarf it down as well. Which is ALWAYS a plus. :rockon

They are in the freezer now, but I haven't cooked them up yet. It seems perfect -- chop & assemble recipe in advance, freeze, dump into crock pot on a busy day. I'll update with a review after we eat the first one. |
