I need portable low-fat snacks with little-to-no processed food..
 
I'm tired of not having stuff for the boys to eat when we are out and about. I can do carrots and other veggies but there is some resistence to that being the only thing. I don't mind making stuff and have made crackers before. But we need more so I AM NOT tempted to eat out and the boys are satisfied not eating out. I will probably start making PB&Js to take wherever we go but would love some more ideas. Oh, and we're mostly fat-free but I can adapt a lot of recipes. And I like making in mass quantities.

Last summer, I did lots of picnic lunches, here's some of the things I'd pack...

-homemade cookies
-nuts, seeds, make a trail mix with raisins, coconut
-apricots
-nut butters for dipping apples
-veggies with hummus, i find if there's salty dip it's more satisfying and can pass up the fries easier
-make granola bars/or granola
-rice cakes...with nut butter on it, or plain! my girls like the thin ones

Boiled eggs are not fat free but nutritious and portable
Any fruit of course
My kids like bean dip made with pinto beans or white beans better than hummus :shrug3

sliced apples travel well.

pancakes are good and also pancake sandwiches. You can make pbj, pbh, or pb banana sandwiches on pancakes. You mentioned pb but that's not low fat but since you mentioned it I figure you eat it. Anyway, you could also make pumpkin spice pancakes or gingerbread pancakes (w/ molasses and spices)

lowfat muffins (zucchini, pumpkin, apple)

French toast sticks (make French toast and slice into sticks)

dried fruit, maybe mixed with cereal would be a low fat trail mix

lowfat yogurt in small containers

My kids love nori rolls. We usually use whatever we have around the house. Carrot, spinach, avocado (toss in some lemon or lime juice to avoid browning), vegan mayo, green onion. If you make them and wrap in plastic, you can just slice them before leaving the house. I suppose they would last 2 or 3 days. But, we eat them up fast.

Cold rice (or make a salad of leftovers) and falafel, cold egg rolls, cold tofu whatever.

We do a lot of cold leftovers. I try to cut tofu in cubes to make it easier to eat. Costco has some awesome egg rolls now.

Cold steamed veggies with a dipping sauce. Cold burritos cut in diagonal slices. Teriyaki wraps (I know I always mention these).

Stuffed celery sticks. Hummus and pita chips.

Honestly I think just making extra food and packing it before dinner really helps me a lot. My kids will eat just about anything wrapped in a flour tortilla. Vegetarian Times has a great article this month with some yummy sandwiches.

Trader Joe's has a TON of dried fruit and veggie options (and most are organic, non-sulphured :tu)

The nori rolls sound like an awesome idea! :rockon

wraps (tortilla with some kind-of spread - hummus, nut/seed butter, "cream cheese" and whatever else you like (spinach, shredded carrots, sprouts, avocado, etc.)...wrap up and slice into pinwheels or eat like a wrap!

bananas, oranges, apples, grapes, etc.

OT - Can I ask why you are fat-free with small boys? Just curious.

I am stuck with just bringing pbj/pbh, apples, tangerines, raisins, cheerios... I need more variety too:D

Cold steamed veggies are great; must have an ice pack though, as spoiled steamed broccoli makes your car :yuck Same with boiled eggs, which are totally go-tos on long road trips.

I buy small amounts of dried fruit from the bulk bins and make up a trail mix for him. If I'm budgeting tightly, then it's something like golden raisins (yes, they taste different fromt he regular raisins), raisins, bits of small graham cookie. I knwo you said no processed, but goldfish crackers and the mixed berry varietry of Quaker Oatmeal cookeis are acceptable here. The cookes surprised me with their lack of chemicals. :D He likes rice crackers too, and almonds/nuts with supervision.

Multi grain bread works in a pinch, handed over a carseat back.

If you can stop and get out to eat, that expands your options. Not fat free, but we make veggie sandwiches with mayo, avocado, sprouts, lettuces, tomatoes and beets.

I'm doing as much fat-free as I can and whatever they eat, I usually eat also.

They aren't lacking in fat by any means and do get a majority of their fats from the source (avocado, nuts, etc). But I'm not strict with them like I am myself. I do make my sandwiches with a fat-free cilantro pesto while making theirs with mayonnaise, stuff like that. I don't just want to feed them chips and crackers.
