Easy, quick winter salad
 
Does anyone have a recipe for a quick winter salad? I'm looking for something I can throw raw veggies into the food processor and whip up a homemade dressing. Maybe like a slaw or something with some kick or sweetness to get DD to try it. :)

Bonus points for dairy/egg free (but I can usually adjust so throw me all your options regardless.)

I don't have a recipe in mind but carrots and beets are both very sweet, some kind of beet salad maybe? Carrot/raisin/crushed pineapple?

I like that idea. I was thinking carrots but didn't think of beets. Raisins would be great cause she loves them. Not for a dressing...off to google. Thx!

We love sliced onions, shredded or sliced beets soaked in apple cider vinegar and honey.

Oh yikes, I don't feel like the salad queen. :O

I like the ramen noodle salad with mandarin oranges and a sweet dressing. I'm not sure if that's the type of salad you're looking for. I would love to make it healthier but not sure what a good sub would be for the ramen noodles.

Ramen Noodle Salad
1 pkg oriental ramen noodle soup
3 oz slivered almonds
1/2 head napa cabbage
4 green onions, chopped
1 11oz can mandarin oranges

Crumble ramen noodles into 9x13 baking pan along with the almonds and spread out evenlt. Bake for 10 minutes at 350 degrees. Allow to cool. In the meantime, tear the tender outer edges of the cabbage into bite-sized pieces and place in a large salad bowl. Add the green onions and mandarin oranges and noodle/almond mixture. Pour dressing over and toss. Serve immediately.

Dressing:
1/4 c canola oil (I use olive oil)
2 TBSP sugar
3 TBSP vinegar
1/2 tsp salt
pepper to taste
oriental spice mix packet from noodles

Mix together ingredients in a jar and shake.

You can add cooked chicken to the salad to make it a meal.

One of my favorite things to eat is broccoli salad. It has raisins and a sweet dressing, but I don't think that it is necessarily a winter salad.

Broccoli Salad
1 head broccoli, cut into bite-sized pieces
Bacon (I use real bacon bits)
1/2 cup raisins
1/2 cup chopped green onion (most of the time I just used some diced yellow onion because that's what I have on hand)
1/4 sunflower seeds

Dressing
1/2 c sugar
1/2 c mayo
2 TBSP white vinegar

Combine all ingredients in a bowl. In another bowl, combine dressing ingredients. Pour dressing over salad and mix thoroughly.


Here's a coleslaw recipe from my family's cookbook. I've never made it, but it sounds good and it has raisins and a sweet dressing.

1/2 head cabbage
1 lg carrot, grated
1 tsp celery seed
1 tsp mustard seed
salt and pepper to taste
1/2 c sugar
1/3 to 1/2 c mayo
1/2 c raisins

Toss all ingredients and chill.

Wow! That pinterest link is something else! The Ramen salad is intriguing. Out of 3 kids, only one loves salad. Maybe one day I can convince the other two :giggle

I'd have to go searching to find his name, but some of those salads on Pinterest make me think of that scientist that would make a huge salad every morning and eat it for every meal, every day of his life for years and years. He was on Nova Scientific American Frontiers one time.

I made an orange salad last year but I can't find the recipe. It was absolutely fantastic and my whole family loved it. I think this recipe comes close to what I remember.
