any good mashed cauliflower recipes?
I have a leftover head of cauliflower from Thanksgiving and I was wondering what I should do with it. I was contemplating mashed cauliflower...would I like it? Would the little bit of natural spiciness in the cauliflower turn my kids off?

I put butter, powdered garlic (just a little), onion powder and turmeric in mine, but if it's less spicy you're shooting for, that might not help much. :think

I put garlic in most things -- I think they're used to that.
I know they aren't big fans of cauliflower raw because it has a slightly spicy taste -- does cooking it tend to "wash it" away or enhance it? Also -- how should I cook it if I want to mash it?:shifty |

I steam it, then mash it using butter and garlic like everyone else.

My kids LOVE it. Steam it until fork tender. Drain as much water as you possibly can. Put in butter and salt and mash really well. You might want to use a stick blender or a hand mixer so it doesn't have chunks.

This recipe that includes carrots in the puree sweetens the flavor of the cauliflower even more, but I don't think even the plain puree tastes as spicy as raw.

I do what Lisa does and add sour cream if I ahve it because it makes it creamy like mashed potatoes. YUM!

Thanks! It sounds so good right now, but I'm wondering if it's too late for dinner tonight?:think I imagine it probably takes 20-30 minutes to steam.:shrug3

You know, I can't remember how long it does take. No one here likes it but me so I haven't made it in a while.

We don't mash it. We throw it in the steamer let it go for awhile and then slather it with miracle whip and slices of cheddar cheese. heat to melting and eat it that way. :lol

roasted with olive oil, salt, and garlic powder..splash some balsamic on after cooking..ummmmmm
