I have three limes
 
They came in a box of mixed groceries and I have no idea what to do with them :scratch

I have a really awesome recipe I use for a Greek style rice. It usually calls for fresh lemon juice, but I have made it with lime as well, and it is just as good. 3 limes will give you about the right amount of juice for the recipe. If you don't want to try to deal with them right now both the juice and zest freezes well.

But as I say that I realize that is a very american thing to say. You might not have space to freeze random Ingredients to use latter

I have a range of "likes" among the five of us ;) but everyone really loves Lime Chicken Tacos. It's the main reason I buy fresh limes.

It's seriously just 1.5 - 2 lbs. boneless, skinless chicken breasts (I think thighs would work, too), 3 Tbsp lime juice and 1 Tbsp chili powder.

Put the chicken in the crockpot. Combine the lime juice and chili powder and pour over the chicken. Cover and cook on LOW for 5-6 hours. Remove chicken, allow to cook slightly and shred with two forks. Return to slow cooker. You can use it just as is and add to tortillas with favourite toppings or, add 1 cup of corn and 1 cup of salsa, stir, cover and cook for another 30 minutes on LOW.

I made Pad Thai for lunch and serve it with a lime wedge each serving.

I do have a leftover lemon and this gave me the idea to juice and zest it and freeze those ingredients.

Do you have canned pineapple? Or fresh pineapple? Lime pineapple smoothie. If you put in spinach it is green, which is cool because it looks green and tastes like lime. Add mango if desired and you have it. Or peaches.

Lime meringue pie.

Keylime pie (you can make it with regular limes)

Salsa with lime juice

Saute rice in the juice

Thai curries often have lime

Squeeze it over tacos or taco salad

You can also freeze the juice.

All of the above, or put it in your drinking water. Adds some fun flavor. Especially good with lemon. I know, you are asking about cooking but still ....

We go through like a dozen limes a week!!!!!! All things Mexican. Marinade for meat, salsa, & guac!! (And mojitos.... 🤪)

Never heard of it before either and I 2nd that eww.

Tangent:
I never put peeps in their Easter baskets bc they already get a chocolate bunny and candy in some of the eggs. But one day they knew about them and they thought they wanted them. So I got them a pack (actually as part of an April Fool's Joke) and they had them and then decided to save the rest to roast as marshmallows over the fire in the summer.

In the end they decided that Marshmellows were better than Peeps and that is the end of Peeps in my home!
