August Dinners
 
Please share what you are making for dinner each day. Links to recipes and pics are welcome!





Tonight we had Greek Feta Burgers, Mediterranean Mustard Potato Salad, Greek Salad, Watermelon.

Oh it is August

Today we went to a farmers market about 40 min away ( I am having trouble finding close ones) and ate at a bar b q place and brought food home for dh

I made the beans and rice recipe from this Instant Pot cookbook and we made burritos with it. VERY GOOD!

I made chicken carnitas last night. Chicken breast in the instant pot,then I shredded it and put it in warm,corn tortillas. A little chopped sweet onion,fresh cilantro and a wedge squeezed lime. Serve with fave taco sauce.

Last night I made ham and broccoli pasta alfredo with Greek salad. Tonight I'm planning to make sheet pan sausage and peppers, cheesy grits, and zucchini from the garden. It's ds last week at home so I'm making all of his favorites this week.

There were only three of us home for dinner tonight, so I was very decadent and did steak! Which I don't think we've had since we were first married :lol I did it with a pepper sauce (from a packet) sweet potato fries, green beans and sugar snap peas and it was delicious :yum

Curry again with lots of veggies

Or any Chinese dish where the meat is mainly a garnish for the vegetables and rice

I dropped my crock pot a couple of weeks ago, shattering the ceramic pot and haven't gotten a replacement. SO.... I'm making crock pot lemon-herb chicken in my Instant Pot. - 35 minutes on high pressure. Here's hoping it works!

It should. I switched all of my crockpot recipes over to pruser cooker 8 years ago when I got my stove top one.

Thanks! Do you have any guidelines for converting recipes? I went by the times for a couple of other IP recipes to figure out how long to cook the chicken last night.

It turned out okay. I didn't measure any of the spices which is why (I think) it was a little under-seasoned, but it was also soupier than the crock pot version. I even used a little less water in the recipe than I do in the crock pot. :think But bone-in chicken done in under and hour? Pretty cool. (I set it for 35 minutes at pressure, but with going up and coming down I think it took about 55. That's about average, isn't it?)

Slow cooker whole chicken with potatoes, carrots, celery and onion; green beans, spinach strawberry salad, and I might make some gravy from the chicken broth.

I think I started with halving the liquid when I was converting them. I think I eventually reduced the liquid even more. I looked at prusher cooker recipes for the time generally.

Actually I think I might have found something that talked about converting them let me go see if I can find it.

We had our church home groups over last night so we had tacos and I made barbacoa beef in the crockpot with a tri tip, and a Qdoba copycat chicken.

Okay, finally trying to get back into menu planning with the craziness of summer. Celebrated DS's first day of high school last night with surf and turf (steak, salmon & shrimp) with prosciutto wrapped asparagus.

Tonight is copycat Cheesecake factory avocado egg rolls and an Asian salad.
