Tonight the fam had homemade GFDFSF pizza, and I made an AMAZING lemon rosemary chicken that I ate on spinach salad with a homemade creamy Italian dressing (dairy Free) and roasted veggies. So good!

I haven't gotten hot Coss but s made yet. I think I will plan on next week even though it will be late.

Care to share your pizza and chicken recipe?

I make this flatbread for pizza crust. I double the recipe to make 3 crusts. Instead of the flours she calls for, I just use my own baking mix with a little less xanthan gum. I use Daiya cheeze with Trader Joe's marinara as the base. I cook the flatbread most of the way - about 8-10 minutes. Then add marinara, toppings and cheeze.

I made this chicken recipe. I didn't add chicken broth. I marinated it and then sauteed it in olive oil. I normally don't like lemon or rosemary!

Today I'm making chicken enchilada casserole and salad. Casseroles make good leftovers to take to work since spring break is over :cry

Well.... no cooking dinner. I made a delicious Easter breakfast of pancakes and sausage.

Dinner is at grandma's after church. :heart

Last night we had one-pot gf spaghetti and lettuce salad with red wine vinegar dijon vinaigrette.

Tonight's plan is chicken breasts, mashed potatoes, gf gravy, green beans.

Last night... Shrimp with lemon pepper butter, Japanese blend veggies (green beans, broccoli, onions, and mushrooms). And mocha mug brownies for dessert :yum

Last night was soup with leftover ham, white beans, potatoes, carrots, and a handful of chopped parsley before serving. With quick and easy drop biscuits for the wheat-eaters.

Tonight will be stir fry with sausage, broccoli, and onions.
