Greek chicken and potatoes with salad (greens, snap peas, cherry tomatoes, cucumbers, red onion, basil, and sunflower seeds). My SIL is visiting and she's dairy-free/soy-free, and this is one of my favorite meals anyway, so it worked out great. :)

How do you do the chicken part of the Greek potatoes? This sounds really, really good.

I use the same marinade (the olive oil, lemon juice, garlic, oregano, salt, mustard) for both the chicken and the potatoes. I usually make a Greek salad too (no greens, peas, or seeds; add feta cheese and Greek salad dressing) but then it wouldn't have been dairy-free.

Oh all the pictures of macaroni and cheese. That is the one thing that I really really miss about being dairy free. I have other things I can do, but they aren't the same.

Tonight was ds16 turn to make dinner. I talked him through making meatloaf since it's his fave meal so I figured he should learn how to prepare it. :yes He did awesome. :rockon He also made steamed carrots and baked potatoes on the side.

Last night I made the entire meal on the grill: bbq chicken, roasted potatoes, grilled zucchini and the last of the asparagus from the garden. Talk about easy clean-up. :yes

Tonight we had lemon pepper tilapia, rice, beets, and a broccoli apple salad.

Tomorrow night we celebrate dh's birthday with his choice of steak on the grill topped with mushrooms and blue cheese, baked sweet potatoes, green beans, wedge salad with blue cheese dressing, cheesecake.

Margaret can't have the fish or Mac N cheese so I'm making her a PB and honey sandwich and allowing her the option of finishing off the corn chips I bought a few days ago. She loves beets salad and pineapple though.
