I made chicken carnitas last night. Chicken breast in the instant pot,then I shredded it and put it in warm,corn tortillas. A little chopped sweet onion,fresh cilantro and a wedge squeezed lime. Serve with fave taco sauce.

Last night I made ham and broccoli pasta alfredo with Greek salad. Tonight I'm planning to make sheet pan sausage and peppers, cheesy grits, and zucchini from the garden. It's ds last week at home so I'm making all of his favorites this week.

There were only three of us home for dinner tonight, so I was very decadent and did steak! Which I don't think we've had since we were first married :lol I did it with a pepper sauce (from a packet) sweet potato fries, green beans and sugar snap peas and it was delicious :yum

I dropped my crock pot a couple of weeks ago, shattering the ceramic pot and haven't gotten a replacement. SO.... I'm making crock pot lemon-herb chicken in my Instant Pot. - 35 minutes on high pressure. Here's hoping it works!

I even used a little less water in the recipe than I do in the crock pot. :think But bone-in chicken done in under and hour? Pretty cool. (I set it for 35 minutes at pressure, but with going up and coming down I think it took about 55. That's about average, isn't it?) |
