Re: August Dinners

I'm planning this for tonight (without the chilli, or dd1 won't eat it) - https://www.bbcgoodfood.com/recipes/...cken-rice-peas I've made it once before and remember it being an easy but tasty recipe, so hopefully it will be!

Re: August Dinners

I've been meal planning 3-4 days at atime. It's less overwhelming.

Tonight is Greek burgers and salad with cookies & ice cream for dessert. My firstborn is 18 today. :jawdrop :happytears Her young man is taking her on their first official date and then joining us for dinner. :heart

Last night we had a tomato cream pasta with zucchini, capers and kalamata olives and a Greek salad.

Tonight I'm planning fish florentine with rice and asparagus.

Tonight I'm trying summer coconut chickpea curry with rice and fried halloumi. I'm pretty sure not everyone in my family will love this, but I just have to try it because it's been calling my name :giggle.

I'm having halloumi tonight as well - but I'm going extra unhealthy with burger buns and fries. And salad :lol

Re: August Dinners

I think we may do chicken pot pie with green beans tonight.
Or leftovers— we have tons of those, and it’s just me and DD tonight.

Re: August Dinners

Last night I did a chicken and broccoli stir fry.

Tonight we had grilled rib-eye steaks, mashed potatoes, and glazed carrots.

I'm toying with making polenta tomorrow night. It's cooling off, so having the stove on won't be horrible, but I really don't want to stir for 30 minutes. :bag. I know I don't really have to, but I can't help myself. I might try making it in the crock pot and doing a quick sausage and veggie sauce to go with it.

First time I've heard of fried halloumi, and two of you are doing it!

I made soft chicken tacos tonight. Chicken, sautéed red onions and yellow peppers, lettuce, cilantro, and dressing made of ranch, siracha, and lime juice.

Tonight its slow cooked butter chicken (and I've just arrived home and my house smells divine!) with brown rice. Its a receipe from my naturopath and everyone loves it

Its been very cold here with high winds the last few days so a yummy, slow cooked meal is just perfect :)

Last night we had Grilled Chicken Pesto Couscous Bowls (quinoa for my GF girl).

Tonight we're having Shrimp Stacks (tastes just like sushi), shrimp gyoza, and an asian salad.

I'm going to roast some sausage and broccoli on a sheet pan, and also make Parmesan risotto and an orange lettuce salad.

Hibachi style chicken with veggies, rice, and dumplings.

Re: August Dinners

I was stumped, so I'm making pasta. :bag

At least it's mostly homemade - zucchini noodles (from our garden) and homemade marinara, boxed rotini for the Littles.

Perhaps a Caprese salad as well.

I really want to eat dessert at Knitlove's house!

I made air fryer chicken wings that were promptly inhaled - it was not close to enough food. (I am exhausted from school starting and didn't think about sides) Dh just left to use a Papa Murphy's credit we have. :O :giggle

It was my first try with that recipe too but DH and I loved it! I thought DD2 would love it and she didn't. I thought DD1 wouldn't like it and she did.:shrug3 After I fried the halloumi, I cut my chunk up into pieces so I could get some in each bite :giggle. Let me know how it goes in your house....

Tonight I'm trying this grilled peach and watermelon burrata salad with a balsamic glaze. It sounds a little weird to me but one of my friends was raving about it so I want to try it now. I'm sure my kids are going to be asking where the main dish is :giggle. Hoping to be pleasantly surprised!

It was fairly popular - especially the halloumi! I ate mine separately and tbh I wasn't 100% convinced about the combination of flavours, but the others enjoyed it, so :shrug3 I skipped the cayenne pepper because dd1 doesn't like spice, but she still found it 'too spicy' :scratch I think I'll put some in next time, because the rest of us would have enjoyed it.

Moussaka made with tiny meatballs instead of ground beef in the sauce, for DD1 and topped with Kalamata olives, for me. :)

We have several evenings a week like this. My plan is to cook at 1-2pm and have leftovers for dinner. OR get some nice sub bread and have sandwiches. OR do meatballs in the crockpot for meatball subs.

I think we're having black bean burritos today - another recipe from a GCMer, from one of these threads a few months ago. I need to plan some kind of side to have with it, though, which may involve going shopping as I don't think we have much in :scratch Maybe salad and wedges?

Lady Grey 08-22-2019 06:12 AM

Re: August Dinners

Last night was a beef and cauli rice dish from the THM book plus roasted green beans.

Tonight is scrambled eggs and fruit because I'm out of mental energy for dinner, plus Dh takes one kid to a late afternoon appointment.

School started this week but next week activities start and it's overwhelming. I have no problem with sandwiches!
