Your favorite muffin recipes, please! And, adding protein powder?
I'm on a mission to fill my freezer with muffins because my kids are tired of their self-serve breakfast choices. And I don't like making breakfast more than once a week.
What are your favorites? I'm looking for healthier choices but they don't have to be completely sugar free or anything. But I'm not looking for cupcakes that call themselves muffins. :lol I just made these double chocolate zucchini muffins. They are fantastic. They only have 1/2 cup of sugar and 1/4 cup of avocado oil per 12 muffins . And there's the zucchini in there. They're still not super healthy but I'm going for middle of the road, here. We've liked this recipe a lot recently. I leave out the nuts and raisins for our personal tastes. It makes a lot of batter too - when I double it I end up with 24 muffins plus a couple of mini loaves. I have not tried adding protein powder to baking recipes. I have made a few recipes that use Greek yogurt. The recipe I posted could probably do well with Greek yogurt in place of some of the applesauce. |

We are GF, so not sure you want any of my recipes :giggle But I add up to 1/2 cup protein powder to every single baked good we make (breakfast baked goods). I use brown rice or pea protein, unsweetened.

My favorite discovery was basic muffin recipe in The Tightwad Gazette and The Joy of Cooking. This much dry + this much wet + up to this much wet fruit or veggies, or up to this many dry mix-ins. There were even a couple variations on the basic mix, like one with whipped egg whites to hold heavy additions such as whole berries. It's a little hit or miss compared to tried-and-true recipes, but great for confidence using up whatever is on hand.
Deceptively Delicious and the other similar book both had muffin/pancake chapters with recipes packing fruit, veggies, and/or beans into baked goods. |

We made these the other day. They were definitely not sweet. Ds liked them. Dh didn't, but I think he likes them to be much sweeter. I'd probably add a little more honey next time. |
