You can also buy cooked polenta. It comes in tubes and doesn't need refrigeration. It's much more expensive that way but I buy it when it's on sale. I slice it and either grill it or sautee it in olive oil. I prefer firm polenta, not the porridge consistency.


It's great grilled!

I *love* grits, and I order them at restaurants all the time (shrimp and grits! Yum!!) but mine never come out right. I should keep trying.

I have seen the polenta tubes at Trader Joes.

I have crockpot fajita beef cooking. I think I will make some brown rice and do burrito bowls.

We are grilling with my best friend and her hubby today! So I’m making apple pie :) Yummm!!!

Fun story: I’ve known her since kindergarten. Her son and my daughter have the same birthday a year apart :heart

Pineapple, soy sauce, rice wine vinegar, ginger, and garlic marinated grilled skirt steak, roasted potatoes, grilled veggie kebabs (zucchini, mushrooms, bell pepper, red onion), grilled corn on the cob, grilled pineapple.

Steaks, sweet potatoes, salad. I wish I had planned for a fun dessert, but I think we will just pass out ice cream sandwiches.

Apparently we are going to the in-laws rental cabin for dinner. So, I'm making what I had planned (Chef John's Peanut Curry Chicken) & bringing it along. They are making burgers & brats.

I bought ribs in the hope that dh would smoke them. I have a potato dish and coleslaw to go with plus sopapilla cheesecake.

I must be really hungry because all of this sounds so good!

Last night was Mexican chopped salad with honey lime cilantro vinaigrette and cheese quesadillas.


We were supposed to grill hamburgers but it is storming so I am not sure if that is going to happen.
Also, the kids really wanted me to make a cake and let them decorate it like a flag. I decided to go with the family to an event this afternoon and did not bake it, and now I am soooo tired, I am really, really liking Lady Grey's idea of ice cream sandwiches instead. Hey, I saw something somewhere with them rolled in red/white/blue sprinkles on the outside. That looks super fun.

Tonight we are trying the Fish Florentine that was posted in last month's thread along with rice and parmesan roasted zucchini (I'm making it with gluten free panko).

I have leftover chicken and brown rice that I plan to turn into some sort of Tex Mex casserole, plus salad.
