Slow Cooker/Crock Pot Beef Sandwiches?

I really want a beef sandwich- something with yummy beef and onions and sauce, kind of french dip-py maybe.
I have been poking around and can't seem to find any recipes that sound good that do not call for some type of soup/seasoning packet (au jus mix, condensed french onion soup, or a packet of onion soup mix or italian dressing mix.)
Does anyone have a recipe that will give us a nice rich sauce and some flavorful beef?
I can use roast or stew meat, I have both I need to use up.

Thanks!

I'll share mine :heart I saute an onion in a bit of olive oil until they are carmelized, then add mushrooms and 1/2 C red wine and bring to a boil on low heat. I pour in 2 C beef stock and simmer on low about 10 min. or until thickened. I season and brown the meat, pour the sauce over, and let it cook about 4 hours on low if it's a boneless roast. I usually cook about 2 lbs so if you have more meat than that, adjust cooking times.

Hmmmm, that sounds tasty....I don't have red wine, I do have port....think that would work, or too sweet?

Keep them coming!

My friend says a roast, a can of beef broth and a dry package of italian dressing with some onions or banana peppers in the pot for a few hours.

Shred with fork

If you're open to canned soups in the recipe, I have one that tastes really good!! :0)

1 envelope beef stew seasoning
1 can beef consomme
1 can beef broth
1 can french onion soup
1 roast

Mix soups and seasoning. Pour over roast and cook all day. Shred meat, remove fat, and return to crock pot. Serve on thick rolls/buns.

The flavor is really yummy and it makes for terrific leftovers!!

Oops, just noticed you said you didn't want any canned soups or seasoning packets. Sorry!!
