coconut milk/cream questions
 
I have a few recipes that call for canned coconut milk, but not the whole can. How long does it keep once opened? Can I freeze it for future use?

I also have a recipe that calls for a small amount of coconut cream. Any suggestions for how I can use up the rest of the can?

You can freeze it.

You can use the rest instead of liquid or fat in baking- yum! Or make a smoothie or a coconut curry.

It only lasts in the fridge for a few days...maybe four...before it turns. I use it with chicken broth, herbs, and cornstarch to make something like a can of soup for casseroles and sauces.

You can also buy cans of just coconut cream - they're much smaller and great for recipes.

Oh that is really nice. The can of coconut cream I got from Trader Joe's is the same size as the coconut milk cans.

It freezes well. I freeze it in ice cube trays, and then pop them into a plastic bag for storage. But I basically do this with almost everything :)

If you keep a full fat can in the refrigerator for 24 hrs, you can dip the fat off of the milk.

The fat makes a fantastic tasting whipped cream. YOu just add some vanilla and a little sweetener and whip it up. I would think you could even freeze dollops of the cream to drop into hot chocolate or in coffee for a treat. :)

I use it to make a mock tiramisu that fits with my daughter's DF cake.

You can also buy half sized cans...small skinny cans like what tomato puree comes in.
