Gluten-free, vegan black bean brownies?
Anybody got a recipe? My google-foo isn't working for me today. Ideally, the recipe would be dairy, egg, and grain-free. Oh, and no bananas, either.
This is for DS2's birthday tonight in, oh, 3 hours. :lol |

Do you have egg sub on hand? If you do, I have one that will work. My kids love them.
1 can black beans 3 eggs 3T oil (I use coconut. :yum) 1/4 cocoa powder (more if you like. I do about 1/3 cup) 1 t vanilla 3/4 c sugar (sucanat works) Combine the above in a blender or food processor until smooth. Add 1/2 cup chocolate chips (if you want. I think they are much better with.) Pour into a square pan. Bake at 350 for 30 minutes. |

My egg replacers have not been working lately. I can't figure out what changed, but nothing seems to work anymore, and certainly not 3 egg's worth of replacers. :no
I'm looking at this: http://cheekychicago.com/cheeky-vega...bean-brownies/, but I don't have the vegan chocolate pieces. I think I have one Enjoy Life chocolate bar. Somewhere I've seen a recipe for turning cocoa powder into chocolate chunks, but I can't find it now. :banghead |
