Re: June Dinners
We had scrambled eggs, pancakes, turkey bacon, and turkey sausage links (not all of us ate each item but they were there for the taking).

Re: June Dinners
I haven't made lasagne in years since it would have to be gf/df. I'm interested too!
I'm making the pasta spinach sausage meal Lisa described, leaving out the sausage for the vegetarian and using pecorino Romano which the dairy-allergic kid is ok with. |
Re: June Dinners
Ha! I've been making cottage pie all this time and calling it Shepherds pie! I'm not sure I can break the habit. :shifty

I'm not much of a 'recipe' person but I'll try :giggle 1lb beef mince 2 onions, chopped 1 courgette/zucchini chopped (or grated if you have picky eaters) However many mushrooms you feel like, chopped 1 large carrot, grated (extra veggies that no-one can find! 1 large or 2 small bell peppers chopped Garlic (to preference) Dried Oregano, I probably ended up with about a tbsp A decent slosh of balsamic vinegar 1 stock cube 2 tins of chopped tomatoes Squeeze of concentrated tomato paste All in the slow cooker, on high for 4ish hours. Layer into a pan with gf lasagne sheets. For the white sauce I used unsweetened almond milk (I didn't measure it, I just glugged it into the saucepan until it looked about right) with a little salt and pepper and a couple of swipes on the grater with a nutmeg. Then I thickened it with cornstarch. I grated what was left of our block of 'safe' cheese (we like Violife. Do you have that brand?) And sprinkled it on the top, then baked at GM 6 for 30ish minutes. The lasagne sheets said to blanch first but I forgot and they still worked fine :shrug |
Re: June Dinners
Tonight I made up a recipe for Gluten Free Italian Mac n Cheese - it included spicy Italian sausage, onion, green pepper, diced tomatoes, cream cheese, sharp cheddar cheese, half and half, salt, pepper, granulated onion and garlic, Italian seasoning with gluten free rotini. It was really good! I served it with one of my favorite things ever - kale Caesar salad.

Re: June Dinners
I made 2 pans of lasagna tonight so all I have to do tomorrow is make a fresh salad! :rockon
It was cold and rainy today and it even snowed up in the mountains! :jawdrop So lasagna, garlic bread, and salad sounded good. I don't normally make lasagna in summer. We are having such a cold summer so far. Supposed to be 93F on Thursday, though. Quote:

Re: June Dinners
Well that sure does simplify things. Don't you need more liquid if they start out dry?

Re: June Dinners
We had spaghetti and garlic bread last night.

Re: June Dinners
