how to get good tasting vegan mased potatoes?
 
my vegan mashed potatoes at thanksgiving didn't turn out that great. any tips for christmas dinner? we are also gluten free, soy free, and egg free.

We make our mashed potatoes with just a butter substitute (we use Earth Balance - I'm pretty sure they offer a soy-free version), salt, pepper, garlic, and a dash of almond milk. They always taste yummy :)

like palm oil or unflavored coconut oil? i can't do butter-flavored vegan subs.

My mashed potatoes are decidedly non-vegan, but we do one vegan-ok thing that really adds to the flavour. When we are boiling the potatoes we add 1-3 cloves of garlic to the water & then mash them right into the potatoes. The garlic flavour becomes quite mellow and yummy.

Yes, the garlic mellows. It is so good.

We use yukon gold potatoes. I often leave the skins on.

I don't know. I've always used the same brand, whose name escapes me at the moment, and I'm NAK so I can't go downstairs and check. I'm sure most would be okay. Not sure if they're all gluten-free or not, though.

A yummy and pretty variant is to boil some carrots with the potatoes, and mash them all together. Parsnips are good to add too.

I'd still use some broth and garlic too.

What in soy-free margarine can you not have? Its GFSFDF. I use that & unsweetened coconut milk.

knock me over with a feather! i had no idea there was soy-free margarine out there that wasn't trans-fat based! i'll have to see if my WF or food co-op carries it!

It's made by Earth Balance. The packaging has red writing. If your WF doesn't carry it, ask them to. I did, and for the first few months, my WF (the largest in the 6-state area) couldn't keep it on the shelf!

i JUST got off the phone with my WF. :) they have it in stock! woo hoo! i read it has some corn in it, so i won't go overboard, but i am so excited!

Yes, there is a coloring or natural flavoring that comes from corn. It's trace and one of the last ingredients :)
