Pinto beans smashed with all the spices - but smoked paprika is the secret to making them really really taste good. I also do a veggie saute with peppers, onions, squash, but mushrooms form the base 'meatyness'. Again with all the spices and smoked paprika.

You guys use substitute cheeses and such? We use Daiya because we can't do soy. We have been making our own refried beans and putting rice, refried beans and "cheese" into a crunchy tacos. Yum!

I don't use cheese. :shrug Processed fake cheese is all gross to me.

I don’t use fake cheese. I miss real cheese, though. Nothing quite like it. Creamy cashew sauces are my cheese substitute. Today I made taquitos with beans, cashew ranch, coconut bacon, and hot sauce. Delicious!

I've heard Jeri talk about using sub products, so I was speaking based on that :) It's been so long since I've had any cow's milk products that I like the added flavor the sub adds.

The Oh She Glows cookbook has a to die for baked nacho dip. From memory, it contains cauliflower, carrot, onion, cashews, marinara, nutritional yeast, salt and spinach.

I cannot make it often enough for my DS.

I may have to try that. I've been looking for a cheese sauce, but the ones I've tried (you know, the ones that get all the RAVES for tasting like the REAL THING :doh) have been heavy and starchy, which is not good at all for mac and cheese.

I do make cultured nut cheeses; they are more like spreads and are so, so delicious!

My sons don't like Daiya cheese, but the rest of our family does! Daiya was recently bought by another company, and briefly their shreds changed, but it looks like they are back to the original recipe again (at least that is what I've seen at the store most recently). :phew It's the second time I've seen them try to change their recipe. Whenever they change it, we quit buying it. When will they learn? :rolleyes :giggle

I was wrong, the dip I mentioned above doesn't contain cauliflower. :doh (I'm sure you could add some if you want. :tu)

Tonight I'm making fajitas, which I make all the time. This is my go-to bean recipe.

Although I've never bothered before with a vegan cheese sauce, I'll bet it would be a nice addition. This one caught my eye, but I haven't made it yet.
