Can I freeze cucumbers shredded?
 
I'd like to save it for zatziki later on...any ideas? :think off to google.

I found one website where someone said they peel, slice and freeze cucumbers in a Ziploc bag and find that they are find for salads and dips. Dunno??? Never done it...

what's zatziki? we've got a ton of cucumbers from our CSA and other than pickling them, I'm not sure what to do with them...

My friend just made some "benedictine" salad (sp?) and it's yummy!

Sorry, don't know about freezing....I was wondering the same thing today about chopped green peppers and onions though :think

Some of my cucumbers froze in the back of my fridge and they were *not* appetizing after that. No crunch, super-soft and just plain icky. However, they were cut into sticks and were meant to be eaten that way--maybe if they were shredded and you were going to pulverize them for dip later anyway, it wouldn't matter. I don't know what you do with them to make that dip.

You can definitely freeze peppers and onions, I do it all the time.

As or cucumbers, I'm not sure. I have frozen shredded zucchini and thawed it to make zucchini bread and it worked fine.
