I remember my mom using a pressure cooker when I was little, but I have no idea how to use one. I hope that someone has some ideas for you.

I sometimes use my PC, mostly for potatoes and London broil meats. When I got my PC, it came with a little recipe book. Let me know if you would like some recipes from that book or maybe you already have a booklet with the recipes that came with yours....

according to dh a pressure cooker is the best way to make dulce de leche, a fav of his. We don't have a pc, however.

I never use mine. My MIL apparently used to make stew in it. :shrug

i don't have one anymore either, but I really like making artichokes in it, and beans are much faster in it as well.

I haven't used mine for awhile. Mostly because I haven't had much experience with it and am unsure how to use it.

I will get mine out in a couple days(after I go to the store) and post what I do.

My mom did stew in it. Basically brown your meat in oil, then put all the stuff in and bring it up to pressure. I don't know which pressure she used or for how long, but it wasn't very long(15mins?).

Like I said...will be back...if I remember. So someone else has to post to bring this up again, k? :shifty

i make rice, beans, potatoes, etc in mine....mostly side dishes. i never thought to do stew...i will have to give that a try.

I love my PC! I didn't realize this forum was here!

I do lots of good stuff in my PC, and I've just ordered my second PC (I have a 7L, and am ordering a smaller one). I have a couple of good PC cookbooks that have oriented me to my PC since getting it as a gift a few years ago.

Here are the books I have:

The Best Pressure Cooker Cookbook Ever, by Pat Dailey
The Pressure Cooker Cookbook, by Toula Patsalis

PCs are made much safer that they used to be. I have a Kuhn Rikon and it has a dual safety system which makes it impossible to open without taking down the pressure first. No more kitchen explosions (I've heard rumors of that happening in my grandmother's day!).

People often mistake a PC for just another substitute for a crock pot. NOT TRUE! A crock pot cooks the living daylights out of everything (and somehow, regardless of the ingredients, everything from a crockpot seems to come out the same consistency -- yuck!). A PC allows food to retain many of it's nutrients (unlike a crock pot) and food tastes exciting, as if it had been simmering all day long!!!! I can't say enough about my PC.

There are! And another author is Lorna Sass, although I don't have any of her books (but she's kind of a big name in pressure cooking).

A good friend of mine turned me on to pressure cooking. She teaches classes at our local co-op and has made everything from soup to dessert in hers!

I used to have a pressure cooker but just used the bottom as a pot. :blush I'm scared of them. :bag

I make all my soups in them....

I start by sautéing onions, garlic in olive oil and then all my veggies with a dash of Sauvignon Blanc.....and then add water and close the PC...in 10 minutes it is all done and then I like to puree it all in my blender. I never use stock...I just add wine instead and just use water. And they are VERY tasty.


I of course use mine for beans previously soaked (but I have made some beans without presoaking them in my PC like chickpeas for my hummus)

I don't eat much meat so I don't do stews i them but my mom used to make them in her PC.


I love my PC....

I can't think of anything else I use it for... :think

I did make it once in the PC ...very yummy!

I love my pressure cooker - well, I loved my old one until I dropped it and broke the handle :doh, and the replacement one I got is not nearly as flexible and reliable. But still, I like the one I have. I used my old one for brown rice - 20 min. cook time vs. 45. And I love it when I forget to thaw something, or I want a slow-cooked taste in just a few minutes.

For a scatter-brain like I, it can be a life-saver...I may plan to have potato soup but get home with only 15 minutes until lunch time. So I throw it in the pressure cooker and in 10 minutes, it's cooked. I LOVE it!! It saves energy/electricity too.

This is so interesting! I WOH and feel like I never, ever have time to make a decent meal (or we end up eating the same old thing). I was always afraid of them because I'd heard they could explode, but it sounds like the newer ones might be safer? I need to look into this. :think

I need to get mine back out!

I have done beans, pot roast (BEST I ever made--mouthwatering and fall-apart tender), soup..... what else? :think

but I tend to forget about it b/c I'm "used to" regular pots.

It really does cut down on cooking time. :yes :rockon and the flavor of almost anything is better when it's done in a PC!

The newer ones typically have 3 separate safety release mechanisms.

PCs are expensive, but don't be intimidated by the price. They are a fantastic investment! I've made some of my best meals in my PC. It's not like a crock pot that turns everything into mush.

I have 3 PCs. :shifty

2 Kuhn Rikon (sp??) and one electric one from QVC....they are all different and good for different things!

My friend has an electric from QVC as well. She says she likes it because her smaller Kuhn's handles get too hot on her gas cooktop (and one actually melted!). How big are your electric and Kuhns? I'm trying to make a decision on a new smaller Kuhn (I have the 7L -- it's enormous), and after my friend told me about her 3.5 L Kuhn braiser where the handle melted (she now covers it with foil -- what a pain), I'm thinking twice about it! She's got an inexpensive Kenmore gas stove so maybe she doesn't have as much control over her flame as I do (not that I have a Viking, but I have good control on my burners, I think).

I will check in the morning what size I have, but my small Kuhn is only the size of a skillet and about 3 inches deep. On a gas burner you are supposed to use a flame tamer. I have used mine on a coil and glass top and the handles never get hot. One of my friends has the same small Kuhn, gas burners, uses the flame tamer thingy and has never had a problem. If I don't post the size of my cookers tomorrow...remind me. :smile

I did stew the other night. Here's the recipe I sorta followed:

1 1/2 pounds beef stew meat
1TB shortening(I use oil)
1 tsp salt
dash pepper(I use more)
1/4 tsp paprika
1 1/2 cups water
1/2 cup onions( I think I ended up using two onions)
4 carrots, whole(I used a bag of baby carrots)
4 potatoes, medium, cut in halves

Brown the meat on all sides in the oil . Add salt, pepper, paprika and water and put lid on. Bring to pressure and cook 8 mins (on 15lbs pressure). Remove from heat and let cool naturally 5 mins and then decompress under faucet.

Add remaining ingredients. My pressure cooker allows you to fill half full, so I kept adding veggies until it was that full. Cover, bring to pressure and cook 6-8 mins (on 15 lbs pressure). Decompress instantly under faucet.

Prepare gravy recipe:
Stir 2 TB flour into 1/4 cup cold water until smooth. Add to stew liquid and simmer until it thickens. Put back in with stew and stir--dinner's ready!
