My homemade bread sucks. I want to make GOOD bread!
 
I've tried a few ways, bread machine, 5 minute bread.

My bread is always a big block of whole wheat-ness.

My white bread is tasty.

But I want whole wheat tasty!

I use integral whole wheat bread flour.

Is there some magic recipe or way?

Could/would you mix your WW and white flour? My mother always used a 3/1 ratio and that kept it from being so heavy.

Try a litle lemon juice. I hear that's good for whole wheat flour. I use it occasionally in my bread....but I don't usually do 100% Ww. I'll cut mine with bleached white, or spelt, kamut. Spelt flour is very yummy IMO and lower on the glycemic index. Even a little cutting helps!

replace some of the water for orange juice (1/4c) and add in more salt

I've been using the recipe in LLL's Whole Foods for the Whole Family and it is working beautifully for me. It's not bread machine or fast -- it's the old fashioned kneading, rising, shaping, rising way. 100% whole wheat too.

This is the recipe as I have it written out on my recipe card. I check the book out from the library often. The whole section on bread making is quite informative and was very helpful. This recipe can be halved, double or tripled.

Basic Whole Wheat Bread (2 Loaves)
1-2 T yeast
2 1/4-2 3/4 C warm liquid (I use water)
1-4 T honey, molasses etc (I use honey)
2t salt
1/4 C butter or oil (I use melted butter)
6-8 C whole wheat flour

In large bowl, dissolve yeast in warm liquid with 1 t honey. When it bubbles (5-10 min) add remaining honey, salt, butter & 3C flour
Beat by hand for 200 strokes
Add 1 C more flour & beat briefly
Add remaining flour until soft dough results
Knead for 5-15 min until firm, springy and smooth.
Place in greased bowl, turn and cover. Rise in warm place for 1-2 hours or in fridge overnight (I rise mine in the oven with the light on for 1.5 hours approx)
Punch down. Shape into 2 loaves and place in greased loaf pans (I grease with butter). Grease top of loaves (I never remember to do this!)
Cover and rise until doubled
Bake 350 for 35 min.

I usually double the recipe for 4 loaves or make 3 loaves and rolls (dd1 loves to form her own little rolls herself)

Here is my easy (almost) foolproof recipe.

in a 1 cup measure put in an egg and fill to the top with warm/hot water

2 T oil ( I use light olive)
3 T honey
1 cup white flour
2 cups whole wheat flour
salt ( I don't measure, 1/2 or 1/4 tsp or so)
2 1/2 tsp yeast

Do the dough setting on the machine. Mine is Oster and I do the setting that is whole wheat, dough, large

When it comes out drop on plate with flour, divide in half and somewhat shape and put in two medium floured bread pans. Put in warm oven covered with a towel for 30 min. Then bake at 400 degrees for 10 min.

I have messed this up but it is really hard to.

Our favorite bread maker bread is this one:

1 1/2 cup warm water
2 tbsp margarine (or butter)
1 tsp salt
2 cups white flour
1 cup whole wheat flour
1 tbsp gluten
2 tbsp brown sugar
1 cup rolled oats
1 1/2 tsp active dry yeast

I also made it with 2 cups while wheat and 1 cup white, and in that case I added a tbsp of gluten (1 tbsp per cup of whole wheat). It was more whole wheaty, but still soft and spongy, not brick like and dry like some other recipes I've tried. The oats add a little bit of fluffiness, too. Plus they're good for you. :-)

Tammy's Recipes is the recipe I used before going gluten-free: http://tammysrecipes.com/homemade_wheat_bread it was perfect in my breadmaker, and she has instructions for all whole wheat or half/half.

Also, you may need to filter your water. Chlorine & yeast do not get along. I only use filtered water for bread.

I just started using unifine flour, I like it so much better.

Whole grain beads are going to be heavier. You can add gluten or acid.
