Re: October Dinners
Lamb stew with apricots. I found a small package of lamb stew meat when cleaning out the deep freeze. It won't make much should suffice for a decent dinner. Sweet potatoes and some sort of red cabbage salad/slaw. And planning a trip to the store!

Re: October Dinners
I brought out the crock pot for the first time in a long time. I had forgotten how great it feels to have dinner ready about the time you'd normally have to get dinner ready. :sillygrin
I dropped in frozen chicken tenders, a jar of salsa, two cans of black beans, one can of corn, two cups chicken broth, half a can of pumpkin, 1 1/2 t. chili powder, 1 t. cumin, 1 t. salt. I shredded the chicken when it was finished cooking and served it over rice. Sour cream on top would have been a nice addition. |
Re: October Dinners
Early bird picked so we had meat loaf and roasted baby brushel sprouts with pomigranet bisalmic vinegar.
I hate doing meat loaf it is so expensive and hard to steach it over many meals. |
Re: October Dinners
I roasted 2 spaghetti squash last night, while making supper, and shredded them, and let them drain in the fridge overnight. Tonight, I mixed with wilted, chopped spinach, diced bacon, garlic, and parmesan cheese. Baked, and did roasted broccoli.

Re: October Dinners
Tried a new recipe tonight because I had some leftover shredded chicken to use up. Creamy chicken taco pie. http://www.garnishandglaze.com/2014/...cken-taco-pie/ I used corn tortillas so it was gluten free. And everyone loved it! So good news!

Re: October Dinners
I was short on time last night so we had chicken sausages with peppers and onions and a side of steamed broccoli.
Tonight I'm thinking some variation of hand pies stuffed with ground beef and veggies. |
