Lentil Enchiladas are amazing.
Use
this recipe for the lentil base, then roll in tortillas & top with 1.5 cups (or 1 can) enchilada sauce. Sprinkle with cheese and bake at 350 for 30 mins or until bubbly.
ETA: I double the lentil recipe & freeze 1 portion. Once thawed, it's super fast to throw the enchiladas together. You could also assemble the enchiladas, then freeze, but I've never done that.
